How our vinegar and condiments are made

OUR TRADITIONAL BALSAMIC VINEGAR DOP

Our Traditional Balsamic Vinegar of Reggio Emilia is the product of time and nature. It is obtained by means of a natural fermentation of the cooked must and a long seasoning, never less than 12 years.

The alcoholic fermentation, the acetic oxidation and the aging are slow operations that follow one another in casks of different woods, arranged in battery: oak, chestnut, mulberry, cherry, ash, ruin and juniper, each one gives a particular aroma to the product. which will become so unique.

The production is regulated by the rigorous and restrictive disciplinary established by the ABTRE Consortium, of which we produce all three qualities: Lobster, Silver and Gold. A magical balance of perfume and aroma, a precious asset, reserved for people with a wealth of taste. A pure concentration of organoleptic delights.
The product is sold in 100ml bottles bearing the Protected Designation of Origin (PDO) mark.

Loboster

Aged at least 12 years. Thanks to the soft, delicate aroma and the good acidity it can enrich carpaccio, pinzimoni and salads or even flavor shellfish, lamb chops, chicken breasts and lightly cooked red meats after cooking.

Silver

Aged from 12 to 25 years. Its soft and sweet and sour character makes it preferable for risottos, soufflés, first courses and sauces. Also excellent used raw in mayonnaise or in sauces for boiled meats or fish.

Gold

Aged at least 25 years. Extraordinary and complex product, rich in aromas and harmony of hints more sweet than sour, noble in structure, persuasive and persistent. To be tasted with savory and spicy cheeses, fruit salads with berries, strawberries or cherries, custards or ice creams, panettone or strudel, but above all it is a real elixir to be enjoyed by the spoon at the end of a meal.

OUR CONDIMENTS

The condiments from our vinegar factory are produced following the original processing method and left to age in barrels of different woods, giving them a particular scent and aroma. We use the highest quality raw materials, 100% natural, without the addition of sugars, colourings, preservatives or sulphites. The three varieties of “RISERVA” condiments take their names from the historic towns of Montericco. They are available in 100 ml and 250 ml formats, in the “dressed” or “undressed” version. The “BOTTI” condiments are a simpler product, but always made with cooked must of grapes typical of the Reggio Emilia area and wine vinegar, following three different aging processes. The three varieties are available in the 250ml format. “&BIANCO” is a balanced sweet and sour condiment, produced with white wine vinegar and concentrated must. It is available in the 250 ml format, also in the White variant with BIO THYME.

Castello

It is the oldest, densest and sweetest of the three, naturally rich in aromas and flavours. To be used on spicy and savory cheeses, with risottos or spoon desserts.

Ca del Vento

It has a lower concentration while maintaining a certain density. Ideal for seasoning both cooked and raw dishes.

CA DEL VENTO

Ha una minore concentrazione pur mantenendo una certa densità. Ideale per condire pietanze sia cotte che crude.

Giareto

È il più acetoso dei tre, il suo profumo semplice e delicato e l’acidità piacevolmente intensa lo rendono perfetto per pinzimoni, insalate e marinature.

THE PROTECTION

To certify the quality of this vinegar, fruit of a millenary tradition, in the 1980s the Controlled Designation of Origin of the Traditional Balsamic Vinegar of Reggio Emilia was recognized (Law 3 April 1986 n.93 and DM 3 March 1987 n. 191), which production, protection and control methods are regulated. The Protection and Control Body is the Consortium of Producers, which works in favor of the members, guaranteeing their quality through its own Technical-Scientific Committee and a Tasting Commission.
